Preparation:
We’ll start by preparing the rice. Cook it according to the instructions and let it sit for a few hours (ideally overnight). If you’re short on time, just cook it and let it cool. In 1 tablespoon of olive oil, fry the tofu cut into small cubes until crispy and set it aside. In the remaining oil, sauté the finely chopped white part of the spring onion, then add the cooked and fully cooled rice. Stir-fry everything together for a while. Then, add the kimchi with its juice, soy sauce, and lime or lemon juice to taste. Create a well in the middle of the rice in the pan, and cook a scrambled egg in it. Season with salt and pepper, then mix it into the rice and add the pre-cooked tofu.

Then remove from heat. Serve the fried rice with chopped green part of the spring onion.
